Raisin and Chocolate Chip Cookie


(Recipe from Amy Beh with slight modifications)
Ingredients
1) 175g butter
2) 180g castor sugar
3) 1 tsp vanilla essence
4) 2 small eggs, lightly beaten with a forkSift:
5) 280g plain flour
6) 1/2 tsp baking powder
7) 25g cocoa powder
8) 1/8 tsp salt
9) 1 packet semi-sweet chocolate chips
10) 1 small packet of raisins
Method
1) Lightly grease baking trays. Preheat oven to 180 ÂșC.
2) Cream butter, sugar and essence until light and creamy. Beat in eggs gradually.
3) Fold in sifted dry ingredients, chocolate chips and raisins and mix well.
4) Drop teaspoonfuls of mixture onto prepared trays, allowing space for cookies to expand.
5) Bake in preheated oven for 15 to 20 minutes. Cool cookies for one to two minutes on the tray before transferring to a wire rack to cool completely.
Note: This cookie is chewy texture..

Homemade Pineapple Tarts


(Makes about 180 pieces)
Pineapple Jam (using microwave)
3 pineapples
300 gm sugar
4 cloves, 2 star anise, 1 cinnamon

Method

1. Blend pineapples in blender and let it drain naturally.
2. Add in spices and cook on high 50 minutes uncover till it is almost dry. Stir 2-3 times occasionally.
3.After 40 minutes add sugar and cook on high till the jam become rollable. Cool and store in airtight container in fridge for further use.


Pastry Ingredients
580g plain flour
3 tbsp of milk powder
1/4 tsp salt
1 1/2 tbp sugar
375g butter
Egg mixture : mix together 1 egg, 1 tsp vanilla and 1-2 drops yellow colouring

Method
1. Shift flour, add in salt and sugar, mix well.
2. Cut butter into small cubes, rub butter into flour till mixture resembles breadcrumbs.
3. Add in beaten egg mixture to the flour to form a pastry dough, chill for 1/2 hour.
4. Roll pastry to 0.5cm thickness, cut with a special tart cutter.
5. Fill tart with pineapple jam.
6. Bake at 200 degree for 20 minutes.
